Wild Rice Soup

Directions:

  1. Dice the following:
    • 1 large onion
    • 6-8 celery stalks
    • 6-8 carrots
    • 1/2 clove garlic
    • 1 - 1 1/2 cups ham
    • 1 1/2 - 2 cup chicken
  2. Add vegetales to 6-7 quarts of chicken stock and cook until vegetables are tender
  3. Add spices to taste
    • 1 or 2 teaspoons dry mustard
    • 2 or 3 teaspoons dry parsley
    • 1/2 teaspoon sweet basil
    • salt and pepper
    • 1/2 teaspoon tarragon
    • 1/4 teaspoon tumeric
    • 1 bay leaf
    • Sliced toasted almonds
  4. Add 1/2 pound wild rice to mixture (boil and rinse 3 times until rice is tender)
  5. Make a roue with 1/4 pound a butter and enough flour to make a consistency resembling cake or brownie mix
  6. Let the soup mixture cool for a while and add slowly 1 pint half and half
