Sweet Potato Suffle

INGREDIENTS:

  • 3 cups cooked sweet potatoes, mashed
  • 1/3 cup butter or margarine, softened
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut
  • 1 cup brown sugar
  • 1/3 cup melted butter or margarine
  • 3/4 cup white sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/3 cup flour
  • 1 cup chopped nuts

Directions

  1. Combine the mashed sweet potatoes, white sugar, softened butter or margarine, beaten eggs, vanilla, and milk
  2. Spoon into a two quart baking dish
  3. Combine the coconut, flour, brown sugar, nuts, and melted buter.
  4. Sprinkle over the top of the sweet potato mixture
  5. Bake at 350 degrees for 30-35 minutes
