Sweet Potato Soufflé
INGREDIENTS:
- 3 cups cooked sweet potatoes, mashed
- 1/3 cup butter or margarine, softened
- 1 teaspoon vanilla extract
- 1 cup flaked coconut
- 1 cup brown sugar
- 1/3 cup melted butter or margarine
- 3/4 cup white sugar
- 2 eggs
- 1/2 cup milk
- 1/3 cup flour
- 1 cup chopped nuts
Directions
- Combine the mashed sweet potatoes, white sugar, softened butter or margarine, beaten eggs, vanilla, and milk
- Spoon into a two quart baking dish
- Combine the coconut, flour, brown sugar, nuts, and melted buter.
- Sprinkle over the top of the sweet potato mixture
- Bake at 350 degrees for 30-35 minutes
