Roast Leg of Lamb with Orzo

Ingredients:

  • 1 (5-6 Pound) leg of lamb
  • 4 garlic cloves, slivered
  • 1/4 cup fresh mint
    • 2 table spoons crushed dried-leaf mint can be used instead
  • 1 teaspoon crushed dried leaf oregano
  • salt and pepper to taste
  • 1 large onion, thinly sliced
  • 1 cup water
  • juice of 2 lemons (6 tablespoons)
  • 4 cups chicken or beef broth
  • 2 cups orzo
  • 1/2 cup tomato sauce
  • 1/2 cup grated kefalotiri
