Duckling in Walnut-Pomegranate Sauce

INGREDIENTS:
- 1/4 cup butter or margarine
- 1 large onion, finely chopped
- 1 (4 pound) duckling, cleaned
- 2 1/2 cups chicken broth
- juice of 1 lemon (3 tablespoons)
- salt and pepper to taste
- 1/2 cup ground walnuts
- 1 tablespoon sugar
- pomegranate seeds for garnish
- walnut halves for garnish
DIRECTIONS:
- Melt butter or margarine in a large pot
- Add onion
- Saute until tender
- Rinse duckling thoroughly
- Add duckling to onion pot
- Add broth, lemon juice, salt and pepper
- Bring to a boil
- Reduce heat and cover
- Simmer over low heat for 40 minutes or until duckling is barely tender
- Remove duckling from pot
- Skim excess fat from pan juices
- Stir in pomegranate juice, ground walnuts, and sugar
- Return duckling to pot
- Bring to a boil
- Reduce heat and cover
- Simmer over low heat for 1 hour stirring sauce occasionally to prevent sticking
- Place duckling on a platter
- Spoon sauce over duckling
- Garnish with pomegranate seeds and walnut halves
Makes 3-4 Servings
