Vegan Peking "Duck"

Ingredients:

  • 1 can Vegetarian Mock Duck
  • 1 tablespoon Olive Oil
  • 1 package Chinese Spring Pancake
  • 3 thinly sliced Spring Onion
  • 1/2 thinly sliced Cucumber
  • 3 tablespoon Plum Sauce

Directions:

  1. Place Spring Onion (3) and Cucumber (1/2) on a serving plate, set aside
  2. In a small serving bowl, mix Plum Sauce (3 tablespoon) with 1 tablespoon water, set aside.
  3. Drain the Vegetarian Mock Duck (1 can) with a sieve, shaking to remove excess water then transfer to a chopping board and cut into 1-2cm thick strips.
  4. Heat Olive Oil (1 tablespoon) in a large, non-stick frying pan then add the mock duck and fry for 5 minutes until it turns golden. Transfer to a serving dish, set aside.
  5. Steam the Chinese Spring Pancake (1 package) in a steamer for 3 to 5 minutes until soft (or 30- 60 seconds in the microwave).
