  1. In large bowl, combine 1 cup flour, softened butter, powder sugar and salt. Mix until blended
  2. Press crust into bottom of 9 inch round pie dish. Bake at 375 for 15 minutes
  3. While crust bakes, combine sugar, eggs, vanilla, baking powder and remaining 1/4 cup flour. Stir in rhubarb.
  4. Remove crust from oven, pour rhubarb mix evenly into crust, and bake for 45-50 minutes

Serve with whipped or ice cream
