Vanilla Carmels

INGREDIENTS:

  • 1/3 cups butter
  • 2 cups sugar
  • 2 cups light cream (or heavy cream DO NOT use half and half)
  • 1 cup corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

DIRECTIONS:

  1. Line an 8" square baking pan with foil
  2. Lightly grease the foil with butter
  3. In a heavy saucepan combine sugar, 1 cup of cream, the corn syrup, and salt
  4. Cook over moderate heat stirring constantly for 10 minutes
  5. Warm remianing cream in the microwave for 1 minute
  6. Add it very slowly so it doesn’t stop boiling
  7. Cook stirring constantly for 5 minutes
  8. Stir in the butter 1 teaspoon at a time
  9. Continue cooking stirring constatntly until the candy reaches the firm ball stage (248 degrees on a candy thermometer)
  10. Pour the carmel into the prepared pan DO NOT SCRAPE THE SAUCEPAN
  11. When the carmel is cold and firm, lift the pan and remove the foil
  12. Using a sharp knife, mark the carmel into 1" squares then cut it
  13. Wrap in wax paper or plastic wrap
